Abstract

This study is a reprint of a work, already published in a book by A. Cortonesi, G. Pasquali, G. Piccinni, Uomini e campagne nell’Italia medievale, Rome-Bari 2002, pp. 240-260. The reprint – now with footnotes – is augmented by two unpublished paragraphs concerning olive oil and other than olive oil markets.
